While not something we associate with Mexican food, turkeys are actually native to Mexico and have a long history in Mexican cuisine. For an authentic south-of-the-border experience, try braising pieces of turkey in rich mole poblano or green mole made with tomatillos. If you want a traditional Thanksgiving whole-bird centerpiece, roast a turkey with a sauce made from New Mexico and arbol chiles.
